Here is a light and tasty summer dish to enjoy cold, as an entrée.
The eggplants are delicately roasted and then combined with buffalo mozeralla cheese , tomato coulis and a pinch of basil. The terrine is an individual serving but you can enjoy it without restraint during a sunny lunch, a gourmet picnic or a light dinner.
